The coffee is planted at an elevation between 4400 feet to 5300 feet (1340 meters to 1620 meters)This village is located on a different mountain range, too far to travel every day.
The farmers were trained to how to wash, remove floaters and dry on raised bed. the cherries were picked ripe, washed to remove floaters, dried on raised beds to 10-12% moisture
content, stored in 50kg plastic bags to rest for minimum 1 month before milling in a Penagos Dry Mill, export size is 15 screen size and above, moisture at export is all within 10-12 %, all coffee is hand-sorted to remove primary and secondary defects .
The brand of wet mill: Penagos Pulper and Washer DCV 183. Myanmar coffee is unique in that, we purchase fresh coffee cherries from 1028 Pa-O farmers. Each farmer only has a backyard garden of coffee. We hire one person in each of our villages to do quality control and buy cherries 5 days a week.
All coffee is then processed as a micro mill to maintain quality. We have the names of every family that sells the coffee in each village.
Other crops that these coffee farmers grow: Tea, Avocado, Ginger, Turmeric,
Garlic, Sweet Pea, Potato, Rice and Oranges
