Practices The San Antonio farm was acquired by the Mairena family in 1976. This farm was mainly
dedicated to cattle farming and a small coffee area. The pasture areas were reforested in order to
convert them into coffee plantations under shade.
From 1999 to 2007 the farm was managed under the standards of the IFOAM organic certification. Due to
the family's management before the Ministry of Environment and Natural Resources (MARENA), the farm
was recognized in 2000 as a Private Natural wild reserve. Additionally, San Antonio is a private wildlife
reserve, the farm is located in the El Arenal Nature Reserve. San Antonio produces coffee with the standards
of the C.A.F.E. Practices. 40% of the farm is nebliselva mountain area, where a large amount of water is
produced and serves as a repertoire of flora and fauna.
The farm produces the varietals-Caturra, Castilla, Colombia, Marsellesa, Obata, Parainema y Salchimor, Java,
Arara, Maragogype, and processes their coffees in a multitude of ways- Washed, Aneirobic Yeast, Naturals,
Honeys, aneirobic fermentation, All the coffees that San Antonio produces is dried and milled at Sajonia
Estate.
During harvest coffee is handpicked, with cherries being selected for colour and maturation. The coffee is
then dried on raised beds at the Sajonia Estate Mill for 20 - 30 days weather dependng.
