At the end of 2016, Falcon Specialty launched a project in the Copan region of Honduras,in collaboration with a small co-op – Aruco – where we supplied training, technical supportand expertise.
The project was focused on producing high quality microlots at a centralisedmill, giving small producers access to specialty markets and quality price premiums. 25small producers, with farms ranging in size between 1 and 5 hectares, were supported inthe production of these microlots.Norma Iris Fiallos owns the farm San Rafael, located in the Los Limos area of Corquin,Copan.
Norma is one of the most innovative producers in the area, with a vast array ofdifferent varieties, includ- ing Bourbon, Catuai, Maragogype and Paraneima. The farm isnestled within a pine forest, which greatly acidifies the soil, giving the coffee a veryunique cup profile. The coffee is completely shade grown and the production area representsa fraction of the total land
